The products from the enviroment

Ignacio Echapresto bets for the products that nature offers in their mountain chain of Moncalvillo (mushroom, game meat, honey ...), because many of those products are the perfect answer to traditional cuisine, the cuisine of the people that he tries so hard to recuperate.

In this occasion he found the answer in apiculture.

Wearing his beekeeper suit he let his imagination run free enhancing dishes with Moncalvillo Meadery honeys and meads.

The pairings

Carlos Echapresto, incharge of the dinning room and the cellar of Venta Moncalvillo and nacional price of  gastronomy as best sommelier, happens to find trouble at the time of pairing with wine those dishes that has acid and bitter vegetables, brines or vinegars.  He has been trying to find a product that didn´t only pair the dish but that could enhance the flavour of those products at the same time that those personal elaborations that they develop. And he ended up choosing mead.
